Butter chicken is believed to be developed by a cook in Moti Mahal restaurant in New Delhi. Since then, it is being savored by people not only in India but also abroad. Its mouth-watering, rich, creamy, mildly spicy taste is so enticing that it is been served by all the big restaurants in the India. We also want you to indulge yourself in the flavorful, aromatic recipe of Butter Chicken.


Boneless chicken 700 grams

For marinade:

¾ cup plain yogurt (Stained or hung)

1 teaspoon turmeric

1.5 tablespoon garlic paste

1.5 tablespoon ginger paste

1.5 teaspoon Dried Fenugreek leaves (kasuri methi)

1 teaspoon garam masala

½ teaspoon Kashmiri red chili powder

2 teaspoon cooking oil

Salt to taste

1 tablespoon Lemon juice

For Makhani gravy:

2 tablespoon butter

2 clove

2 cardamoms

½ cup Tomato Puree

2-3 Black Peppercorns

2 inch stick of cinnamon

1 teaspoon fenugreek/methi seeds

2-3 tbsp cashew paste

2-3 tbsp chopped coriander/cilantro

1/2 tsp garam masala

1/2 cup fresh heavy cream

1 tsp red chilli powder

salt and pepper to taste

1/2 tsp chopped onion

1 tsp. ginger garlic paste

¼ tbsp. sugar

Steps for making delicious butter chicken:

  1. Wash chicken under running water and pat dry. Marinate with lemon juice, chili powder, yogurt, kasuri methi, oil, turmeric, ginger garlic paste, and garam masala powder. Refrigerate for at least 3 to 4 hours, overnight works wonder. It will make the chicken soft will melt in your mouth.
  2. Preheat the oven to 200°C/400°F/Gas Mark 6. Grill the chicken in an oven or stove top. Add one tsp. butter and add the marinade. Fry on high flame till all the moisture evaporates. Cook till it is golden brown.
  3. Now, heat the pan and add butter and immediately add the garlic paste. Now, add slit green chilly. Also add cumin powder, red chilli powder, salt and other spices.

  4. Add the tomato puree and cook till the gravy leaves the side and starts bubbling.
  5. Pour 1 cup water and add methi powder, almond paste or almond milk.
  6. Cook the gravy for 5 minutes. Add kasuri methi and garam masala to it.
  7. Add chicken and simmer for about 5 to 7 minutes till it becomes soft and tender.

300 grams Basmati Rice

½ kilograms Chicken

400 ml Chicken Stock

Fistful mint leaves

A pinch of Saffron

4 tablespoon cooking oil/ghee/butter

Fresh coriander leaves for garnishing

Fried Raisins for garnishing (optional)

For marinade:

1 cup Un-sweetened plain curd

2 teaspoon Ginger garlic paste

1 teaspoon Red chili powder

Salt to taste

1 teaspoon Garam masala

½ teaspoon Turmeric

Lemon Juice of 1 lemon

¾ teaspoon Roasted cumin powder

Dry Spices:

1 Bay Leaf

1 Anise

1 Mace

2 Cardamoms stick

4 Cloves

1 Nutmeg

2 Pepper Corns

Steps for making delicious chicken biryani:

  1. Take a bowl and mix all the ingredients mentioned above in marinade. Add chicken pieces to the mixture. Let it sit like that for 4-5 hours.
  2. Take any cooking oil/butter/ghee in a frying pan and sauté dry spices  and add onions ,mint  till they turn brown (golden).

  3. Soak the basmati rice for 15 minutes in lukewarm water, wash 3-4 times and drain the excess water.
  4. Soak saffron in warm milk and allow it to cool for some time.
  5. Take a deep vessel, grease the bottom of the vessel with ghee/butter/cooking oil, now, add some of the marinated chicken to the pot, add some of the fried onion over it.
  6. Put half of the rice on the chicken as a layer, pour in some saffron milk and fried onions and dry spices over it.
  7. Add all the reserved chicken and chicken stock, then add another layer of rice and pour in all saffron milk over it.
  8. Add some ghee or butter on the top. And cover the vessel with the aluminum foil or thick cloth. Cover the pot with the lid.
  9. Cook it on medium flame for 20 minutes. Now, lower the flame, and cook it for 10-15 minutes. Switch off the flame and open it after 10 minutes. Garnish it with raisins and coriander leaves.

Delicious, aromatic Biryani is ready.

  1. Take a bowl and mix all the ingredients mentioned in marinade, add chicken in the bowl. Rub chicken well with the mixture. Let it sit for 4-5 hours. Overnight refrigeration will work wonders for the chicken. It will make chicken soft and tender.

½ kg Chicken

For marinade:

1 teaspoon Ginger garlic paste

2 slit Green chili

1 Egg

1 tablespoon refined flour

2 tablespoon corn flour

½ teaspoon soya sauce

For Manchurian sauce

1.5 tablespoon Oil (preferably sesame oil)

4 tablespoons chopped spring onion

½ tablespoon chopped capsicum

1 cup Chicken stock

1 teaspoon Corn flour or corn starch

½ teaspoon finely chopped garlic

1 large diced onion

Steps for making mouthwatering chicken manchurian:

  1. Take a bowl and mix all the ingredients mentioned in the marinade. Rub chicken into this mixture. Let it sit like that for 4-5 hours or overnight. Overnight works best for the chicken; it makes chicken soft and tender.
  2. Take a frying pan, pour in cooking oil. When the oil becomes hot, sauté onion, garlic, spring onion and capsicum till it turns golden brown.

400 gm Chicken cut into pieces

2 Onion thickly sliced

1 Capsicum thinly sliced

For marinade:

  1. Take a bowl and mix all the ingredients mentioned under the marinade. Add chicken to this mixture. Let it be like that for 4-5 hours. It will make chicken soft and tender. However, overnight marination works best for it.
  2. Take a frying pan and pour in some cooking oil for frying. Deep fry the chicken pieces on high flame till they are golden brown and properly cooked. Drain the excessive oil on the absorbent paper.

10 chicken wings

1 teaspoon soya sauce

1/2 teaspoon Kashmiri chili powder

1 tsp ginger paste

1 drop red food coloring (optional)

2 teaspoon garlic paste

1 teaspoon finely chopped green chilly

2 tablespoons corn flour (or corn starch)

1 teaspoon refined flour (maida)

Cooking oil for deep frying

Salt to taste

Steps for making chicken lollipop:

  1. Collect all the flesh in the chicken wing at one end of the chicken bones.
  2. Take a bowl and mix ginger paste, garlic paste, green chili, chili powder, soya sauce; salt .This will be the final marinade.
  3. Now, rub the chicken with the marinade and make sure the chicken is well coated the prepared marinade, leave it for 2-3 hours. By overnight marinating, chicken will turn soft.
  4. Now, mix maida and cornflour/ corn starch, color and mix them well. Maida and corn flour have binding properties and will help in keeping the masala on the chicken intact.
  5. Heat sufficient cooking oil in a frying pan .It is advisable to not over heat the oil, keeping the medium flame will help chicken in getting cooked from inside as well as outside.
  6. Now, deep fry the chicken in medium flame until they are well cooked.
  7. Alternatively, you can go for a healthier version of this by baking it in a pre-heated oven for 25 minutes at 200 degrees Celsius.

You can put aluminium foil at the bone end of the chicken pieces. Serve hot.

Kadai Chicken Recipe

500 grams Chicken

For marinade

1 tablespoon Ginger garlic paste

Juice of 1 lemon

1 teaspoon turmeric powder

Salt to taste

For gravy

1 teaspoon cumin seeds

2 tablespoon coriander powder

2 large Onion thickly chopped

1 cup tomatoes sliced

½ cup tomato puree

1 teaspoon Kashmiri red chili powder

Salt to taste

3 dried red chilies

1 Capsicum

2 teaspoon garam masala

1 tablespoon cashew milk paste (optional)

Steps for making kadai chicken:

  1. Take a bowl and mix all the ingredients listed under marinade and rub chicken all over it. Let it sit for 4-5 hours, overnight work wonders for chicken, it will make it soft and tender.
  2. Pour in some cooking oil in a wok (kadai) and add cumin seeds and dried red chilli and stir till cumin seeds began to crackle. Now, sauté onion, capsicum on medium flame till they turn golden brown.
  3. Add tomato puree to the wok and stir well. Now, add coriander powder, garam masala and salt to the gravy. Cashew milk paste can be added to enhance the thickness of the gravy.
  4. Add chicken pieces to the wok and cook it for 10-15 minutes in medium flame.

You can garnish it with ring onion and coriander leaves. Serve hot with naan /kulcha or pulav.

Palak Chicken Recipe

Palak Chicken is a wonderful blend of iron rich, healthy, nutritious spinach and delicious chicken. With that it became an epitome of healthy yet delicious food. Even a spinach hater will rejoice this dish.


800 grams chicken

2 large/ full bunch of spinach

2 large (or 3 medium) onion finely chopped

2 tablespoon ginger garlic paste

2 teaspoon cumin seed

½ teaspoon turmeric

Salt to taste

4 Green chilly finely chopped

2 tomatos finely chopped (or grinded)

2 tablespoon any cooking oil/butter/ ghee

3 tablespoon coriander powder

2 teaspoon garam masala

1 small cup of unsweetened yogurt (dahi)

Steps to marinate the chicken

  1. Rub the chicken with yogurt, 1 tablespoon ginger garlic paste, turmeric and salt. Leave it for 4-5 hours or overnight. Overnight will be the best time as it will make chicken soft and tender.

Steps for making yummy palak chicken:

  1. Wash the spinach properly so that no sand is left near the spinach leaves. Torn off the stems of spinach. Cook the spinach 1-2 cups of water for 10 minutes and drain the excess water.
  2. Now, heat some cooking oil in the frying pan and add cumin seeds, 1 tablespoon ginger garlic paste. Stir it, till it becomes dark brown. After that, add coriander powder and sauté onions and chillies.
  3. When the spinach has cooled down, grind it in a mixer.
  4. Add mashed tomatoes to the frying pan and stir well.
  5. Add spinach to the frying pan and stir well.
  6. Add marinated chicken with garam masala to the pan and cover it for 5 minutes. Cook till chicken is fully cooked in the spinach gravy.

For extra rich gravy, add 2 tablespoon of heavy cream or butter to it at the end.

Chicken Tikka is one of those fabulous dishes which are famous not only in India but across the world. The word “Tikka” means bits, pieces, chunks. In this aromatic recipe, small nuggets of chicken are marinated with many spices and yogurt, grilled on skewers till it becomes golden brown. It is a party appetizer rock-star as it needs very few ingredients and takes very few minutes to cook it. Chicken Tikka tastes best with sliced barbequed onions, tomato, and capsicum and chaat masala sprinkled on it.


Boneless Chicken: 400 grams (cut into cubes)

For first marinade:

1 tablespoon finely chopped onion

1.5 tablespoon Lemon juice

½ tablespoon Ginger paste

1 tablespoon Garlic paste

Salt to taste

For second marinade:

2 tablespoon Chickpea Flour (Besan)

5 tablespoon /1 cup Yogurt (should not be sour)

1 tsp Kashmiri red chilly powder

1 tsp Turmeric powder

A pinch of Saffron

3-4 tablespoon Pure mustard oil(or any cooking oil)

1 tsp Dried fenugreek leaves(Kasuri methi)

1.5 tsp Ginger Garlic Paste

Red/ orange color (optional)



Oil or butter or cooking oil for grilling

Sliced onion, capsicums, tomato

Steps for the succulent chicken Tikka recipe

  1. Add all the ingredients mentioned in the first marinade above and pour it over the chicken pieces; let it sit over the chicken cubes for about 45 minutes to an hour.
  2. Heat 4 teaspoon oil in a frying pan and add chickpea flour when the oil becomes warm, constantly stir it till it becomes dark brown. In a large bowl, whisk the yogurt, add all the ingredients mentioned above in the second marinade.
  3. Make sure every part of chicken is coated with marinade. Let it sit for at least 5 hours; overnight will do wonders for the chicken, it will make chicken soft and will melt in your mouth.

When you are ready to cook the chicken:

Skewer the chicken cubes in the sticks, about 4-5 in each stick. You can keep diced vegetable in between chicken cubes.

Oven Method:

Pre heat the oven at 400 – 420 F. Place the skewers side by side on a lightly greased tray. Bake for about 10-15 minutes or until they turn golden brown. The chicken cubes should be greased well with oil/butter/ghee.

Grill Method:

Baste the chicken cubes generously with ghee/any cooking oil/butter and cook it over the grill till the chicken cubes turn golden brown.
